Looking for a spring recipe that’s light and full of veggies but still filling? Let us share one of our favorites with you!

Join produce team members, Kat and Kerry virtually in making an African Ground Nut Salad featuring Rolling Fork organic spinach, spicy roasted sweet potatoes, and a creamy peanut vinaigrette dressing! Join in, ask questions, and learn a new favorite recipe!

For those that want to cook along in real time, here are the ingredients you’ll need for the recipe:

Ingredients: Serves 2-3

  • 1 large white sweet potato Casey County

  • 1 large red sweet potato Casey County

  • Berber spice blend

  • Neutral oil of choice (olive, cannola, avocado, even unrefined coconut)

  • Salt

  • Rolling Fork Spinach

  • Dry roasted peanuts

Dressing:

  • 2 TBSP Peanut Butter

  • 1/2 clove minced Garlic

  • 1/2 inch grated Ginger

  • 1 tsp Honey

  • 1-2 TBSP Vinegar of choice (Red Wine, White Wine, or Rice) I will be using rice

  • water as needed

  • Optional: tomato paste

Optional Additions

  • Grape Tomatoes

  • Candied Almonds

  • Shaved Shallots

  • Cilantro
