Lemon Basil Shrimp Scampi
INGREDIENTS:
Bob’s Red Mill baking soda
2-4 tbsp. Bragg’s Extra Virgin Olive Oil
2-4 tbsp. Kerry Gold Salted Butter
2-4 cloves of garlic, sliced
6-10 App Harvest Cherry Tomatoes
12oz package Wixter American Shrimp
2-3 cups of dried CADIA Pasta (choose your favorite!)
CADIA Grated Parmesan Cheese, to taste
1-2 packages Square Roots lemon basil, sliced thinly
1/2 lemon, grilled (optional)
1-2 tbsp. white wine (optional)
Frontier Co-op Crushed Red Pepper (optional)
INSTRUCTIONS:
1. 30 minutes before cooking, toss the shrimp in a small amount of baking soda to make them extra plump.
2. Boil water and cook the pasta until it is almost done but not completely.
3. While the pasta is cooking, sauté the olive oil, butter, garlic, tomatoes, wine and shrimp for 5-8 minutes until the shrimp is cooked.
4. Drain the cooked pasta then add to the sauce in the pan and finish cooking the pasta, 2-3 minutes.
5. Add half of the basil to the pasta and stir it all together.
6. Top with parmesan, the rest of the basil, and crushed red pepper. Serve with lemon to squeeze over the finished dish.
Alternative Cooking Instructions:
You can cook the shrimp in a sous vide at 135 degrees for 20 minutes for perfect texture. Sautee the garlic and butter before adding it to the sous vide bag. As the shrimp is cooking, blister the tomatoes in a skillet. When the shrimp is done dump the entire contents bag into the skillet with the tomatoes and sauté for 1-2 more minutes before adding the cooked pasta.
